Hibiscus Sorrel Sun Tea Recipe (no cook method)
Enjoy my version of a yummy and health-promoting Hibiscus Sorrel Sun Tea!
This recipe counters the summer heat (pitta energy in Ayurveda) with sweet, bitter, and astringent tastes, I think you’ll enjoy.

Ingredients:
Warmth from the Sun on a sunny day
(2)Tablespoons Hibiscus flowers (dried)
(5 -10) Mint Leaves (fresh) crushed
(2) Inches Ginger root (fresh) chopped
(1) Inch Turmeric root (fresh) chopped
(1) Teaspoon Black Peppercorns (whole)
(½) Cinnamon stick
(1) Lime (fresh)
Directions:
Combine Hibiscus flowers, Mint leaves, Ginger root, Turmeric root, Black Peppercorns, and Cinnamon into a clean mason jar.
Add fresh/filtered water to fill the jar.
Cover jar and set it in the sun for 2-3 hours or until a dark red color is achieved. Swish the contents around in the jar every hour to encourage infusion.
Fill a tall glass with ice, add the Hibiscus concentrate to about half-full, then add fresh, cold water to top off the glass.
Add a sprig of fresh mint.
Add any fruit you love, watermelon, strawberries, and muddle it around in your glass to release the natural sweetness and flavor.
Squeeze the juice of ½ lime into your glass and enjoy!
